Halibut is one of our favourite fishes.  Orange sauce seems to be a perfect fit with it.   The hardest thing though is deboning it!

Ingredients

2 Halibut filets, seasoned with salt and pepper

Olive oil

Butter

1/2 cup chopped shallots

1 cup orange juice

1 cup stock

ground pepper

Directions:

1-Heat a generous amount of butter and olive oil in a pan.

2- When pan is quite hot, add the halibut.  Cook for several minutes on each side until nearly cooked through.

4- Put in an oven safe dish and finish cooking in the oven, at 350 degrees. 

5-Meanwhile, prep the sauce.  Using the same pan, add onions and saute.  Add stock and orange juice.  Bring to a heavy simmer.  Reduce by at least half. 

6-Serve sauce on the side of the fish, or on top.  Enjoy!
