Now that I’ve typed this recipe up, I realize I have all the ingredients. Guess what’s for supper tonight? – Rebecca
Ingredients:
Pork tenderloin
6 strips of bacon
1/2 onion, chopped
1 small apple, cubed
1 sprig rosemary, chopped
1/2 cup bread crumbs
Directions:
Cook bacon. When almost crispy, remove from pan and let rest. Chop into pieces.
Drain excess bacon grease, leaving a few tablespoons in the pan.
Using the same pan, add the onions. Sautee until beginning to cook through.
Add apples.
Continue to cook until onions and apples are soft.
Add chopped rosemary.
Add 1/2 cup of bread crumbs. Add bacon pieces.
Using a sharp knife, work a hold through the middle of the pork tenderloin.
Stuff the hole with the apple stuffing.
Alternatively, slice the tenderloin down the middle, but not all the way through. Fill will stuffing and fold back over. Leave extra stuffing in the baking dish to cook.
Bake at 375 degrees for about 45 minutes, or until pork is cooked through.
